Administrator defined scans in Symantec Endpoint Protection Manager may not offer enough options if you want to launch scan on clients, in example on the first Monday of every two months.

Scheduled tasks in Windows offer more options to schedule your scan. Scheduled tasks may be created via GPO as described on:
Configure a Scheduled Task Item
Create a new task for \Symantec Endpoint Protection\doscan.exe and add any switches you may need. Information of the Doscan.exe tool can be found here:

Then assign the GPO to your clients via Active Directory / AD DS.
