When will Ev be released as a 64Bit application. All of my companies servers are 64Bit except my Ev because i'm waiting on the app to go 64Bit

We are actively investigating this for a future release to consider the impact x64 will have on the overal EV architecture - we'll certainly let you know once we've firmed up the dates.
We just migrated to 64 bit hardware, running EV 2007 as a 32 bit app....there are a few minor quirks, but EV rocks. NB: we are also running SQL on the same box 32 bit.
