Is it possible to set up a policy that so when the SEP client is installed on a server/workstation it disables the Windows Firewall?
SEP can do this automatically, see here:

Go into your SEPM firewall policy and select the 'Windows Integration' tab
From here you can configure SEP to handle the Windows firewall as you see fit.
by default when you install SEP with Firewall enabled in any windows os it will disable the windows firewall, no manual intervention/settings is required.
I'm noticing on servers where the client is installed that the firewalla is enabled and running
Windows firewall?
What's the exact SEP client version on them?
