There are 2 ways to backup a VM

1) Install Remote agent on the VM. (RAWS license required) or

2) Use Agent for Hyper V, This option allows you to backup all the VM's hosted by the Hyper V server.

Refre to Best Practices for Hyper v agent http://www.symantec.com/docs/HOWTO21770

To install the agent in the VM, go to Tools ---> Install Agent and push out the agent to the VM. If you have a Hyper-V host, you should also push out the remote agent to this host.

If you want to backup the VM as a physical machine, then create a backup job and select the VM's Netbios name.

If you want to backup the VM as a VM, then select the VM host.  The VM will appear under the VM host.
