I insert the word "casinò" but the symantec brightmail trasmorm this word in "Casin?"
Why? All the caracter "à" "è" "ì" "ò" "ù" the program trasform in "?"

Which version of Brightmail?
I just gave this a quick test in SMS-SMTP 5 (created a compliance policy called "casinò", looking for "casinò" in the subject line and appending the subject line with "casinò"). Each input box accepted the word fine and hasn't changed it.

No, If I open the nodepad and write 'casinò' after I copy this text in brightmail (Subject or Body), brightmail transform all in 'casin?' and the my rule is not work correctly.
I think is a problem with mysql or tomcat!
Is a problem with utf8 ?
