    In the Symantec Enpoint Protection Manger Console, how do you change the URL of the Live Update Server you want to point to?

    Go to the LiveUpdate/Server Settings as shown below. Add the URL of the new LiveUpdate server.

    The above is for changing the source that all of your clients go to for updates. If you want to change the location that the Endpoint Manager itself points to:
