Any particular reason you would like to delete the log.liveupdate ?
The file could surely be deleted, however would be created back again as this file is a log file for Liveupdate.
In your case, you have a disk space issue - I would suggest you to follow these Articles:

The file is 475 mb. I would like to remove it and let it grow again. Would that corrupt anything?

you can delete the log file.upgrade client to SEP 12 as it saves only one definition insted of 3 definition set.

This size is unusual, you shall have a look at its content before deletion, in order to find out what is causing it and avoid the problem to reoccur.
