you are going to have to be more specific...

Do you want to open the client interface?
    The manager?
    etc.

for client interface type this ( considering the SEP client is installed in C:\)

    C:\Program Files\Symantec Client Security\Symantec AntiVirus\SymCorpUI.exe

    for SEPM

console.bat is present at the same location where the SEPm is installed. You can use that batch file to open the SEPm console.

    C:\Program Files\Symantec\Symantec Endpoint Protection Manager

I think so you want to write command in Start >Run.
you can start with this : C:\Program Files\Symantec\Symantec Endpoint Protection Manager\bin\sesm.bat

but if you want to easy way like write only %sep%
Rigth click on he my computer and go to system properties > Advanced> Environment Variables
    and
add new variable name sep  Value %programfiles%\Symantec\Symantec Endpoint Protection Manager\bin\sesm.bat
    and close the window.
after that you can start sep manager with write %sep% to start>run

    I hope I understand true.

Yes Faith, Sesm.bat will also do the trick :-) to open the SEPM console.
