which is the procedure to delete the information recorded on a tape?

You need to erase it it to delete the information on tape

The one you have shown is 2 partition in picture so please go to one of the slot by double clicking on one of the partiton and then right click on it or see at the top you will have option to erase

As it is in non English language i am not familiar with the option but if you can translate it in English then check for erase if you see it and can erase it then it is the right option

A "label" or "erase" job with make the tape appear to be empty, but hte actual data is still (mostly?) there.
If you wish to achive a higher level of security, try a "long erase" job. It will re-write the entire tape and will typically take hours.
