I'm getting ready to meet with the CIO and IT Ops manager to review our av settings as we prepare for a SEPM migration.  Is there anywhere that I can find a matrix of the options for each policy and their default settings.  I've scoured the SEPM administrator's manual and found nothing.

    Thanks

Thanks, Aniket.  Excellent information about GUP.  What I was hoping for was a tool, even a spreadsheet, that lists the policy components and the options for each component.

I cant say I've ever seen something like that here, or from Symantec.

You may want to find my recent post about "SEP secret sauce" and review that.
