Best course of action with missed spam is submitting it to symantec to create rules.

You can also attempt to block it based IP or domain in the premium antispam settings or using content filtering rule to block them.

The best way to handle spam with SMSMSE is, of course, manual submission.

Manually submitting missed spam and false positive messages to the Symantec Security Response Center. - http://www.symantec.com/docs/TECH83081

You could potentially create a content filtering rule to trigger based on some of the aspects of the message (subject, words, characters) and address it in a more direct manner.

Note: Content filtering rules essentially have access to all messages in your mailstore and any incoming or outgoing depending on their configuration.  They should have their action set to "Log Only" and be tested prior to implementation.
