This issue has been solved. See solution.

How can I enable an exchange mailbox for archiving on a new server, if it had previously been enabled for archiving on another EV server?

A few Steps

  1. Setup a new Exchange Target (and associated system mailbox) and create an Archiving Task for the new Exchange server
  2. Ensure the Vault Service Account has permission on the new Exchange Server and Send As permission on the new system mailbox.
  3. Disable the current user for archiving on the current EV server (i.e. Use the Disable Mailbox Wizard)
  4. Enable the user for archiving via the "Enable Mailboxes for Archiving" wizard in the console and choose the existing mail Archive that is already listed in the console.
  5. Bobs ur uncle...
