    Open sd.feeder.technicalincidentforms package in Workflow manager. Find Create Incident Form builder component - it is in the center of the project. Double click it. Then double click on "Type" Dropdown list. Click on "..." button  opposite ITEMS field. In the opened menu you can change the values. When you finish deploy the project.

    Also to add to bold's comment, and I haven't got the process open in front of me, but just in case the Items values aren't "constant values" in the form, you can use the Add Items to Collection component to add values to this collection beforehand.
