I have a Windows SBS 2008 server with a mix of XP and W7 clients running SEP v11.x

I wish to replace these clients with the Symantec Cloud product.

The documentation for the Symantec Cloud version of AV is confusing.  In one place it states that the installation will uninstall SEP and in another place it states that all Symantec Products must be removed before installation of the Cloud product. 

Where can I find definitive documentation?

If I am not mistaken, the Symantec.cloud uses Norton Products for client machines and Symantec Endpoint Protection version 11.0.5002 for Servers.

The .cloud product uses the Norton (consumer) client with a cloud based management console. It allows organizations with up to 250 users to centrally manage their Endpoint Security without need for a server or management infrastructure.

If the Bandwith is not the concerm then you can go for the Cloud Product. Again you cannot overite the SEP.Cloud over SEp 11.x. You ill have to start as Fresh
