This issue has been solved. See solution.

I have a SBS 2003 server with 2 hds in raid 0. Can I use BESR to back it up, add a 3rd hd, configure the server as raid 5, then restore the system to the server?

I don't know whether BESR needs an exact hardware/configuration match, or not, as I have never used it.

 Yes this would work.  When creating the RAID array, the RAID card is creating a virtual disk from the 3 physical ones.  Thus software like the OS and such will only see what the RAID card presents, not the underlying hardware...
