This issue has been solved. See solution.

This morning after the weekend, we noticed that the Latest Symantec version date on the SEP 11 and SEP 12 consoles(home pages) are stuck on the 10/04/2013 r35 .

Any idea how to reset this or get it back to normal? The latest on Manager is correct version dates on SEP 11 and SEP 12?

I'm running SEP 11.0.5 where I don't believe this issue has been resolved for "managed" clients.  In my SEPM, my 64-bit antivirus/antispyware defs are stuck at 10/10/13 whereas my 32-bit one's a bit better at 10/12/13.  The unmanaged SEP 11 client on my SEP server is as expected at 10/14/13.

Based upon when I've scheduled the updates in my SEPM, usually my antivirus defs are 1 day behind and the PTP defs are the same or sometimes for that day.  On both of my 64-bit Win7 boxes, antivirus and PTP defs are at 10/10 and 10/14, respectively, with av at 10/12 on 32-bit servers with managed clients.

Clint there is currently a issue with SEP 11 and SQL 2005 and virus definitions not updating due to a limitation within SQL. There is documentation now available with a fix for this listed below.

http://www.symantec.com/docs/TECH211503

If I was able to help resolve your issue please mark my post as solution.

Thanks for the info, Cameron.  I'm also running SQL 2k5 where TECH211503 resolved my issue!  Now if I didn't have other unrelated problems to fix at the moment, I'd work on upgrading to SEP 12.  Hopefully it won't be a painful upgrade with both my SEP 11.0.5 and SQL 2k5 on the same server.
