You could try creating a custom report. Under REPORTS in Backup Exec you now have the ability to create custom reports.

Only other way i can think of is to enable extra logging for the job. Go to tools, options, job log, select "Summary information, directories, and files processed"

As Maximus said, you can :

But if you have very large jobs, then the job logs might occupy a good deal of space on your hard disk.

And I am not sure if you can get the list of files backed up using custom reports.
