Mail Security Enterprise Edition - Basic help/advice

Hi,
 
we are migrating across from an old system to Exchange 2003 and using Symantec Mail Security Enterprise Edition 1.0.
 
The setup went through nice and easy but the system does not seem to block the Spam emails that come through.
 
Are there any recommended sites for rules or policies that block the spam, or if they ae flagged as spam and move it to the junk folder and after 5 days the spam emails will be deleted?
 
Or would the moving of emails and deleting be done by the exchange server, as we have all spam moving to the junk folder from each clients outlook but no function to delete after 5 days?
