Migration scenario questions, help needed

I am currently working in a project in which we will migrate a customer from an old Windows 2003 environment to a new Windows 2003 environment.
Current situation: AD name: A, Exchange 2003, Enterprise Vault 7.0
New situation: AD name: B, Exchange 2007, Enterprise Vault 8
A 2-way trust exists between both domains.
Migration will be done in steps, let's say of 50 users per day. Because of lack of time, they don't want my proposed scenario of deleting shortcuts, exporting to pst, migrate mailbox with Quest to Exchange 2007 and import the PST in Enterprise Vault 8.
One of our specialists is thinking about the following scenario, which I think will not work. So I would like to present this scenario to you guys, to see what you think:
The current situation has to stay in place at all time, so no changes are allowed in the current situation.
They want to add the Exchange 2003 server as a Target in the New situation EV8, which also has the Exchange 2007 server as a target already. (what do I need to do on the Exchange 2003 Server to get processed, i.e. configuration of Exchange 2003 front-end, back-end which already has been done because of the current situation) Reason I ask this is because the Exchange 2003 server we will also stay it in the Current situation EV 7.0, so people in the current situation can still archive. Meaning 2 Enterprise Vault Servers with different versions in 2 different domains will have the same target Exchange 2003 server??? Can this be done?
Then from the Enterprise Vault 7.0 environment we want to export archives to PST and then import the PST into EV8, attaching it to the mailbox which will show up because of the Exchange Server 2003 target in EV8.
In the meantime (if the above is possible), people will still work in the current situation on their old workstation, but will use the archive from the new EV8 environment???? Another issue, what has to happen to the outlook add-in on the old workstations???
In a later stage, our Quest tooling will migrate the mailboxes from the current situation to the new situation, at which we have to connect the archives to the new mailboxes. Is that also possible ?
I need some good technical arguements to present our customer why this scenario would or would not work.
Any ideas/arguements, etc. would be much appreciated.

An exchange server can only have one archive task/service that services it. If you point two at the same one they will be stepping over each other. The archive services/task do not have any way of distinguishing which mailboxes they should be archiving and which ones they shouldn't.
So is this true? If it is, it does mean that what I want will not work, or am I wrong?

I believe your last post is accurate, you cannot target the same Exchange server with two seperate EV servers (i.e. to load balance). I'm not sure of the technicalities though as in theory you could have different provisioning groups and corresponding tasks, but I wouldn't risk it....
Personally, here is what I would do;
1. Move the EV7 server into your target domain (along with SQL server) OR leave it where it is. I would personally move it as you may want to decommision the source domain at a later date?
2. Shutdown your EV8 server for now
3. Target your new Exchange 2K7 box from EV7 (Add the new domain and exchange server, then run the provisioning task)
4. Undertake your migration. Users will continue to be archived and able to access shortcuts etc.
5. When the migration is complete, upgrade your EV7 server to EV8 (SP3). This can be completed in 2 steps.
6. Bring the new EV8 server you shutdown previously (step 2) into the picture and rename it to your old server (or give it a new name if you like). See this article;

PS; There are some steps required in moving our EV server to the target domain, but it's not hard seeing as you already have a 2-way trust setup.
