I'm looking for a way to include the files that are beeing shred to the PGP log. Does anyone know of a way to include this info? As far as I can see, the shredder tasks are not loged at all (Windows version of PGP Desktop).

I don't know that you can do this. I'm guessing that you have already tried setting View Topic to All, and View Level to Verbose.
Yes I already tried both of that (even though the log view level switches back to normal as soon as I close the log-viewer).
I tried enabling debug level logging based on the information here http://www.symantec.com/docs/TECH149847. Even with debug logging on the log files did not record the names of files being shredded. You will probably have to submit a feature request to PGP to get the log files to do what you want.
