Maybe a stupid question --
I occasionaly get requests to set up exceptions in SEP according to Microsoft bulletins and/or vendor recommendations for their products. We're only running SEP on servers and TruScan is disabled on servers OS's. I see no other place to setup process exceptions. Am I missing something?

... Forgot to mention that they usually contain a number of folders, files, extensions, and processes. Folders, files, and exensions are not a problem.

Maybe I didn't word my question well. This question is specifically -- if TruScan is disabled on server OS's, then is it possible to create a process exception? The only place I see process exceptions available is under TruScan. So if an application vendor recommends setting your antivirus to exclude their process "xyz.exe" from scanning on servers, how would I do that if TruScan is disabled anyway? Is it a moot point then?
Not needed; they are not monitored anyways :)
