Hello,
We have a fairly large environment and every monday (latest definations etc), we export different types of packages out of SEPM and place them onto network shares in the right directories such as \\share\servers\32bit\server32bit.exe and \\share\servers\64bit\servers64bit.exe and same for workstations etc.
Instead of manually exporting the package every monday, is there a way to script the process out to SEPM and have the exports go to specific direcotry?

There is no way to set a export schedule in the SEPM currently.
There may be a way to script it but since you would be looking at code, I'm not sure Symantec would provide any detail on that, likely for security reasons.

Not really any option like that from SEPM console - only schedules available would be for Definition Distribution.
