Hello wroot,
Yes, it is possible. The SEP client has been compatible with Core since MR2. We are currently at MR4 MP1.
From the MR2 release notes:
Support for Microsoft Windows 2008 Server clients
Support for Windows Server 2008 Standard/Enterprise/Datacenter/Web (32-bit or x64 edition), including Server Core installation, has been added to Symantec Endpoint Protection and Symantec Network Access Control.
One thing to note is that Symantec Endpoint Protection Manager component cannot be installed on Server 2008 Core, only the client components.
Hope that helps!
