Is there a way to uninstall SEP 11.X through a GPO? it looks like each system needs its own uninstall product key in order for a the client to uninstall properly/

    Checked Below mentioned Threads:

    https://www-secure.symantec.com/connect/forums/try-easy-msi-script

    http://www.symantec.com/connect/forums/client-uninstall

It should be pretty simple :

1 On the Windows Taskbar, click Start > Programs > Administrative Tools >Group Policy Management

2 In the Group Policy Management window, in the console tree, expand the domain, expand Computer Configuration, expand Software Settings, right-click

Software Installation, and then click Properties

3 On the Advanced tab, check Uninstall this application when it falls out of the scope of management, and then click OK.

4 In the right pane, right-click the software package, and then click Remove.

5 In the Remove Software dialog box, check  Immediately uninstall the software from users and computers, and then click OK.

6 Close the Group Policy Object Editor window, and then close the Group Policy Management window.

The software uninstalls when the client computers are restarted.

Before performing the following actions (above):

    - Are you managing your clients from an SEPM server?

    - If so, do you have an uninstall password set?

-- Remove the uninstall password from the console settings (this will make your life much easier).

    - Are all your clients running the same version?

    - Did you initially deploy your machines with an MSI package?

    - If you did not deploy with an MSI, you will need to create one before you can upload it to the ADC - GPO policy for uninstallation.  It will need to be the same version (RU and MP) as the version installed.

After those things have been verified, follow the steps in the articles above (I did not check them myself, but assume they are pointing to the proper procedures).

    Hope that helps.
