I have been trying to find information about the compatibility of Ghost 11.5 with server 2012 R2 but i have yet to have any luck. Has anyone tried upgrading to 2012 R2 and had success?

The concensus is that it should work as long as DNS is set up correctly, but there are fundamental Ghost incompatibilities with UEFI bioses that need some patches which are only available to those with current maintenance on Ghost. Ghost 3 has been released as a beta and will address all these issues.
