How many licenses do I have to buy? As I actually use these machines for educational resons (I'm phd student) is there any educational license option to get some discount?

You will need one virtual license for the Windows 2008 R2 host system virtual guests, one server license for the host system itself, and five desktop licenses for the Window 7 systems.
Best though to talk to licensing about this: http://www.symantec.com/business/support/assistanc...
