Upgrading EV

I'm going to upgrade from EV5, SP5 to EV6, SP2. Am I correct in saying I can upgrade to EV 6, then again to EV6, SP2? If not, what's the upgrade path?

Go directly from 5.5 to 6.2.

As micah said you can go straight to sp2, but also remember, an ounce of prevention is worth a pound of cure! Back everything up first just in case!! If the upgrade goes bad and you need to roll back you will basically have to do a DR.
Make sure you have current back up of:
Directory Service SQL database
Directory Service computer
Indexing Service file locations
Shopping Service files
Vault Store SQL databases
Vault Store files
Enterprise Vault servers

Double check those db's..there's nuthin' worse then thinking you've got a good copy of it and finding out...well...it's not so good.
