VDI with SEP 12.1 RU1 Client managed by SEPM

We are starting a pilot of VDI. I am trying to find out how we maintain the latest virus definitions without rebuilding the image every time and yet keeping them managed by SEPM.
What is the best way to apply Antivirus client to a VMware View and Citrix XenDesktop running Windows 7?
