I have few question for you?

I see the login credential is 'PrimaryMailbox' but we are trying to working contact another mailbox for retriving hidden message 'SharedMailbox'. Does it work if primary mailbox if you have configured.

Do you have error/warning message on Exchange 2010 server?

Can you do following steps & try again, send us updated console log in case of failure

Quit outlook.
On Mac machine browse to "/Users/<User that has the issue>/Library/Application Support/Symantec Enterprise Vault/Settings/"
Delete the "ClientConfigurations.plist"
Launch Activity Monitor, Kill the Enterprise Vault process (helper & toolbar) and then verify that it re-starts with a different process id.
Launch outlook, now you should be prompted to login to the EV Mac Client.

If this is not successful then please send console log again http://www.symantec.com/docs/HOWTO38265 (Please clear the log before reproducing the issue, just to avoid noices).
