A great possible way to use Workflow and build a business solution out of it.  

A good way to protect your data and assets is a well trained workforce.  You can use the SEP Ingegration Component to collect data about Departments or Employees whom are frequently getting quarentine alerts or virus's, once you have the data you could create a report that shows departments with highest risk or employees whom are frequently returning to the report and have workflow automatically enroll them on a security training course (even if you wish to cross charge the dept as result).  This way you can continuously improve your security.
