    Hello, I'm trying to move my entire workflow over to a new server. what is the best way to point it to the new server without having to reinstall the entire thing?

    If you just want to be able to publish to a new workflow server, just add it via the Servers option in the task tray icon.  When you go to Publish from the designer, the new server will be listed.  If you're talking about moving to new hardware, I think the only supported method would be to reinstall. You could probably re-use your old Ensemble database...
